Impact Reports
The Home Economist coordinated the Kitchen Creations Diabetic Cooking School for Eddy County. A Certified Dietician instructed twenty three diabetics and a support person on how to eat according to the diabetic food pyramid, the 50/50 method, making healthy food choices, portion control, menu planning, food preparation, reading nutrition facts labels and the importance of physical activity to the diabetic lifestyle. The participants attended four sessions, each time learning more about diabetes and how to manage their diets accordingly. The Home Economist assisted participants with the food preparation portion of each session and also distributed pedometers to each participant encouraging more exercise. Participants kept a walking log to monitor their steps and turned in the log at the end of the 4 week series.
