Impact Report Two diabetic cooking schools, Kitchen Creations, were held in Eddy County. The Home Economist worked closely with a local registered dietician to conduct two sets of four classes instructing citizens of Eddy County in better ways to manage type two diabetes by diet. The Home Economist coordinated the locations for the classes, advertised the event using two newspapers in the county, registered participants, planned and arranged recipes that would be prepared and sampled by participants, purchased all grocery and supply items for each class, and also instructed the participants in a brief lesson on food safety. One series of classes was offered in Carlsbad in the spring and in Artesia in the fall. Forty one participants attended the classes and completed the series of classes and food preparation lessons. Although only Forty one participants were registered, there was a waiting list of about seventy people for both classes. Participants came from all communities in Eddy County and were instructed on topics such as foods that are better choices for those with diabetes, balancing meals, consuming more fiber and protein, preparing low sodium and low fat meals, and the importance of exercise. Of the forty one participants, eighty percent completed post lesson surveys and indicated that they are still using information learned in Kitchen Creations in meal preparation at home. The Home Economist will plan to continue offering this program twice a year as it is clearly a need of this program as proven by the number of people on each waiting list.
