Impact Report Kitchen Creations Kitchen Creations, A Cooking School for Diabetics and there Families is offered every spring. During the cooking school, four hands-on learning lessons and sometimes a potluck reunion three to six weeks later for evaluation of changes in food selection and preparation are conducted. Twenty five participants participated in the classes. In addition to the cookbooks and participant handbooks provided from the state Kitchen Creations project, home economist presents a compiled folder of information for each participant or family. The folder consists of additional recipes, Cooking Ahead for One, Two or a Crew, news articles from Karen Halderson, Extension Diabetes Coordinator, the Extension How-To Series on Diabetes and any additional information that is timely. Participants are able to put into practice the lessons taught by a registered dietician and county home economist by preparing recipes and sampling the dishes. The objectives of the cooking school are to increase participants’ understanding of the effects foods have on blood glucose; increase their ability to prepare healthful, flavorful foods along with trying new recipes, cooking techniques and ingredients. An overwhelming majority of the participants have reported that the knowledge gained during this program has helped them to make better food choices at home and while eating out for them and their families; practice healthier cooking methods and use healthier ingredients; reading and understanding food labels; have better meal planning skills for people with diabetes; and practicing the 50/50 plate method. This program has been very successful and grown both in popularity and increased need by the public.
